Hummus

Hummus is one of my favorite's.  I made up a batch yesterday afternoon and DD2 declared that she loves hummus.  Hmmm I wonder where she gets that from? :)


This is the recipe that I have for Hummus. Enjoy :)

Yield 1 1/2 c.

1 1/4 garbanzo beans, drained and rinsed
1 Tbsp. fresh lemon juice
1 Tbsp. fresh garlic
2 tsp. extra virgin olive oil
2 tsp. tahini paste
1/2 tsp. kosher salt
1/8 tsp. freshly cracked black pepper
dash cayenne pepper
dash ground cumin, toasted
1 tsp. extra virgin olive oil to drizzle on top of finished dish before serving

1.   Place all of the ingredients into a food processor and puree mixture until smooth.
2.  Taste mixture and add more seasonings if desired.
3.  Served chilled with a drizzle of olive oil on top accompanied with breads and crackers.

It took me a while to get on-board with hummus. Matt loves it and makes it a lot and I just kept trying and trying. Now I'd certainly say I love it. And its so quick and easy to make at home. The prices at the stores are a scandal.

Yes...just the push I needed to make some today...will try your recipe, it looks lovely.
Shop-bought dips are full of yucky additives too :*(

Good Morning Prairieharmony, We absolutely love houmous in this household. I notice there is a difference in the spelling between American and English. When I lived in Cyprus I used to use olive oil from olives we harvested from our trees. They were then pressed locally in the village in which we lived, so the quality of the olive oil was superb. Hello Daphne, What a treat to use your own olives for oil. I'm sure that hummus was delicious. Interesting the different spelling between English and American. I'm always fascinated by the different terms and words for things of the same meaning. Have a great day :)
